Fresh Noodles, Made In-House

At Kung Fu, we believe that a great bowl of noodles starts with the noodles themselves. That is why we produce our own fresh noodles in-house using a professional noodle production line.

Our production in Kødbyen begins with an industrial vacuum dough mixer, capable of mixing up to 50 kg of flour and other ingredients in each batch. Under vacuum, the ingredients are mixed into a fine, snowflake-like dough, helping create an even texture and consistent dough structure.

The dough then enters our high-torque four-shaft rolling system, where it is gradually pressed and developed through multiple rolling stages. After further sheeting and rolling, the dough finally enters the cutting machine, where it is cut to the required thickness and width.

With our current production setup, we have a production capacity of up to 800 kg of fresh noodles per day, allowing us to supply both our own restaurants and larger professional customers.

Our signature Kung Fu Ramen is made from a specially developed flour blend combining Danish-produced roasted rye flour with Italian Tipo 00 flour, creating a noodle with more character, aroma and texture.

We also produce traditional alkaline noodles using kansui imported from Japan, giving the noodles the elasticity, firmness and distinctive bite commonly associated with Japanese ramen.

For restaurants and professional kitchens, our noodles can be supplied in 6 kg bulk cartons, as well as practical 1/2 GN and 1/3 GN disposable PP containers for easier storage and daily kitchen operation.

We also offer customised noodle production for ramen restaurants, restaurant groups and distributors. Depending on your concept, we can adjust flour blends, noodle thickness, width, texture and packaging to suit your product and kitchen requirements.
